Riesling Sekt extra brut

Ingredients

• 12 piecesOysters (e.g., Fine de Claire)
• 2 piecesOrganic limes
• 1 pieceShallot
• 0,5 bunchChives
• 1 pinchSea salt
• 1 pinchWhite pepper
• 500 gCrushed ice

Preparation

1. 1Peel the shallot and dice it into very fine cubes.
2. 2Halve the limes, juice them, and mix the juice with the shallot cubes in a small bowl.
3. 3Wash the chives, pat dry, cut into fine rings, and fold them into the vinaigrette.
4. 4Scrub the oysters thoroughly under cold water and carefully open them at the hinge side using an oyster knife.
5. 5Gently loosen the oyster meat from the shell, remove any shell fragments, and arrange the oysters on a platter covered with crushed ice.
6. 6Season the vinaigrette with a pinch of sea salt and white pepper, and serve separately with the chilled oysters.
