Riesling feinherb

Ingredients

• 12 piecesRice paper
• 100 gGlass noodles
• 1 pieceCarrot
• 0,5 pieceCucumber
• 12 piecesShrimp (cooked)
• 1 bunchCilantro
• 1 bunchMint
• 100 gPeanut butter
• 2 tbspSoy sauce
• 1 tbspLime juice
• 1 tspSriracha
• 2 tbspWater

Preparation

1. 1Soften the glass noodles in hot water according to the package instructions, then drain well and trim with scissors.
2. 2Wash the carrot and cucumber, and cut them into very fine, approximately 5 cm long julienne strips.
3. 3For the dip, whisk the peanut butter with soy sauce, lime juice, Sriracha, and a little water until smooth.
4. 4Dip one sheet of rice paper into a shallow bowl of lukewarm water for about 10 seconds until pliable.
5. 5Place the rice paper on a damp kitchen towel and arrange herbs, noodles, vegetable strips, and a shrimp in the lower third.
6. 6Fold the sides of the rice paper over the filling and roll up tightly from bottom to top.
7. 7Repeat the process until all ingredients are used and serve the rolls with the peanut dip.
