Riesling Auslese

Ingredients

• 1 pieceBaguette
• 150 gRoquefort
• 2 piecesripe pears
• 50 gwalnut kernels
• 2 tbsphoney
• 3 sprigsfresh thyme
• 20 gbutter

Preparation

1. 1Preheat the oven to 200°C (390°F) using top/bottom heat.
2. 2Cut the baguette into slices approximately 1 cm thick at an angle and lightly brush one side with butter.
3. 3Place the baguette slices on a baking sheet and toast in the oven for about 5 minutes until golden yellow.
4. 4In the meantime, wash, core, and slice the pears into very thin wedges.
5. 5Toast the walnut kernels in a dry pan until fragrant, then chop them coarsely.
6. 6Top the toasted bread slices with the pear wedges and crumble the Roquefort evenly over them.
7. 7Place the crostini back into the oven for another 2 minutes until the cheese begins to melt slightly.
8. 8Before serving, drizzle with liquid honey and garnish with the walnuts and fresh thyme.
