Ingredients

• 500 ggreen asparagus
• 30 gpine nuts
• 2 tbspolive oil
• 1 tbspbutter
• 1 tbsplemon juice
• 1 pinchsea salt
• 1 pinchblack pepper
• 40 gParmesan cheese, block

Preparation

1. 1Thoroughly wash the green asparagus and trim the woody ends from the lower third of the stalks. If necessary, carefully peel the lower third of the spears.
2. 2Toast the pine nuts in a non-stick pan over medium heat without oil until golden brown and fragrant, then set aside.
3. 3Heat the olive oil and butter in a large frying pan.
4. 4Add the asparagus to the pan and sauté over medium-high heat for about 6 to 8 minutes, turning occasionally, until tender-crisp and lightly browned.
5. 5Deglaze the asparagus with the lemon juice and season with sea salt and freshly ground pepper.
6. 6Arrange the spears on plates, sprinkle with the toasted pine nuts, and garnish with freshly shaved Parmesan.
