Ingredients

• 100 gglass noodles
• 1 pieceripe mango
• 250 gking prawns (peeled and deveined)
• 1 piecefresh red chili
• 2 pieceslimes (juice)
• 2 tbspfish sauce
• 1 tspbrown cane sugar
• 3 tbspsesame oil
• 0,5 bunchfresh cilantro
• 0,5 bunchfresh mint
• 30 groasted peanuts
• 1 piecegarlic clove
• 1 tspginger (freshly grated)

Preparation

1. 1Place the glass noodles in a bowl, cover with boiling water, and let soak for about 5 minutes; then drain, rinse under cold water, and cut roughly with kitchen shears.
2. 2Peel the mango, cut the flesh away from the pit, and slice into approximately 0.5 cm wide strips.
3. 3For the dressing, whisk together the lime juice, fish sauce, sugar, and 1 tbsp of sesame oil until the sugar has completely dissolved.
4. 4Remove the seeds from the chili and finely chop; wash the herbs, shake dry, and roughly chop the leaves.
5. 5Pat the shrimp dry. Finely chop the garlic and briefly sauté together with the ginger and chili in 2 tbsp of sesame oil in a hot pan.
6. 6Add the shrimp and sear over high heat for about 2 minutes on each side until they have taken on a nice color and are cooked through.
7. 7Thoroughly toss the glass noodles with the mango strips, dressing, and chopped herbs in a large bowl.
8. 8Arrange the salad on plates, top with the warm, spicy shrimp, and sprinkle with the roughly chopped peanuts.
