Ingredients

• 400 gChickpeas (drained weight)
• 1 pieceOrganic lemon (juice and zest)
• 4 tbspCold-pressed olive oil
• 1 tspGround cumin
• 0,5 pieceRed onion
• 0,5 bunchFresh flat-leaf parsley
• 1 pinchSea salt
• 1 pinchBlack pepper

Preparation

1. 1Place the chickpeas in a sieve, rinse thoroughly under cold water, and drain well.
2. 2Finely dice the red onion and coarsely chop the parsley, including the stems.
3. 3Finely zest the lemon and then juice the fruit.
4. 4In a large bowl, whisk together the lemon juice, zest, olive oil, and cumin until emulsified.
5. 5Fold the chickpeas, onions, and parsley into the dressing and mix thoroughly.
6. 6Season to taste with sea salt and freshly ground pepper, and let the salad marinate for 10 minutes before serving.
