Red Peppa

Ingredients

• 4 piecesEgg whites
• 200 gSugar
• 1 tspCornstarch
• 1 tspWhite wine vinegar
• 250 gMascarpone
• 200 mlHeavy cream
• 30 gPowdered sugar
• 1 tspVanilla extract
• 300 gFresh mixed berries (strawberries, raspberries, blueberries)

Preparation

1. 1Preheat the oven to 120°C (top/bottom heat) and line a baking sheet with parchment paper.
2. 2Beat the egg whites with a pinch of salt until very stiff, gradually adding the sugar until the mixture becomes glossy.
3. 3Gently fold the cornstarch and vinegar into the stiff egg white mixture.
4. 4Spread the meringue into a circle on the baking sheet, pulling the edges up slightly to form a hollow.
5. 5Bake the pavlova for approximately 60 minutes, then let it cool completely in the switched-off oven with the door slightly ajar.
6. 6In the meantime, whip the heavy cream until stiff and carefully fold in the mascarpone, powdered sugar, and vanilla.
7. 7Spread the mascarpone cream evenly in the center of the cooled meringue base.
8. 8Wash, trim, and if necessary, halve the fresh berries, then arrange them decoratively on top of the cream.
