Stairs n' Roses Peppo

Ingredients

• 400 gchicken breast fillet
• 30 mlsoy sauce
• 10 gfresh ginger
• 1 pcgarlic clove
• 2 tbsppeanut oil
• 120 gpeanut butter (unsweetened)
• 150 mlcoconut milk
• 0,5 tspchili flakes
• 15 mllime juice
• 1 tspbrown sugar
• 12 pcwooden skewers

Preparation

1. 1Rinse the chicken breast under cold water, pat dry, and cut into approximately 2 cm wide, long strips.
2. 2Thread the meat strips in a wavy pattern onto the wooden skewers and place in a shallow dish.
3. 3Finely grate the ginger and garlic, then mix with the soy sauce and one tablespoon of peanut oil to create a smooth marinade.
4. 4Brush the skewers with the marinade and let them marinate at room temperature for at least 10 minutes.
5. 5In a small saucepan, whisk together the peanut butter, coconut milk, chili flakes, sugar, and lime juice until smooth.
6. 6Heat the sauce over low heat, stirring constantly, until it becomes creamy, then keep warm.
7. 7Heat the remaining oil in a grill pan over high heat and fry the skewers for about 3 to 4 minutes on each side until golden brown.
8. 8Serve the hot meat skewers together with the creamy, spicy sauce on a platter.
