Over the Rainbow

Ingredients

• 4 piecesShortcrust tartlets (pre-baked)
• 2 piecesOrganic lemons
• 3 piecesEgg yolk
• 80 gSugar
• 50 gCold butter
• 200 gFresh raspberries
• 1 tbspPowdered sugar

Preparation

1. 1Wash the lemons thoroughly, grate the zest of one lemon, and then juice both lemons.
2. 2Mix the egg yolks, sugar, and lemon juice in a saucepan and heat over medium heat, stirring constantly, until the mixture thickens.
3. 3Remove the saucepan from the heat, stir in the cold butter piece by piece, and fold in the lemon zest.
4. 4Allow the cream filling to cool slightly and fill it evenly into the tartlet shells.
5. 5Top the tartlets with the washed raspberries and dust with powdered sugar before serving.
