Peppa Traubensaft

Ingredients

• 200 gFlour
• 100 gCold butter
• 50 gPowdered sugar
• 1 pieceEgg yolk
• 1 pinchPinch of salt
• 3 piecesOrganic lemons (zest and juice)
• 4 sprigsFresh thyme
• 120 gSugar
• 3 piecesEggs
• 100 mlHeavy cream
• 200 gMixed fresh berries

Preparation

1. 1For the shortcrust pastry, quickly knead together the flour, cold diced butter, powdered sugar, egg yolk, and a pinch of salt into a smooth dough, then chill for 30 minutes.
2. 2Roll out the dough, place it into a greased tart pan, prick the bottom several times with a fork, and blind bake in a preheated oven at 180 degrees Celsius top and bottom heat for 15 minutes.
3. 3For the filling, whisk together the lemon zest and juice with finely chopped thyme, sugar, and eggs, then stir in the heavy cream.
4. 4Pour the lemon-thyme mixture onto the pre-baked tart crust and bake for another 20 to 25 minutes at 160 degrees Celsius until the filling is set.
5. 5Allow the tart to cool completely, and before serving, top generously with fresh berries and garnish with thyme sprigs if desired.
